Kaiseki Hachisen 京懐石 八泉
Kaiseki Hachisen is a famous Nagoya restaurant that is over 30 years old. Its name comes from 2 of the best restaurants in Kyoto where Chef Amano trained: Heihachi Tea House and Kichisen. It is important to know that Amano is also a Zen monk. With this background, we can better understand its proposal: refined Kaiseki cuisine, Kyoto style with minimalist aesthetics. The idea is not to overwhelm the dishes, but to just highlight the purity of their flavors with their natural complexity, all with ... a careful presentation. There are tasting menus both at lunch and at dinner and specials depending on the months of the year. In all of them, the parade of sensations basically revolves around seasonal vegetables, fish and seafood, prepared with the entire palette of culinary techniques of Japanese cuisine. The place is very small with only 5 seats at the bar and 2 small tables. It is located in the residential area of Nekogahoratori. As we have said, it is also very famous, so we recommend booking at least 6 months in advance.
