Tempura Yamanoue is a very famous small chain in Tokyo, specializing in tempura. The original restaurant is located in the Hill Top Hotel (Yamanoue in English), which was one of the first hotels to have a restaurant specializing in tempura. They have other famous branches in Ginza, Roppongi and Nihonbashi Mistukoshi. Basically they use fresh seasonal products; the pieces made in the traditional Tokyo style (Edomae), fried in sesame oil, which is the most appreciated oil for tempura as it is neut ... ral and light. Fish and seafood are fried for a short time at very high temperatures to avoid spoiling their texture and juiciness and the vegetables at a low temperature to preserve their properties. Both at noon and for dinner there are menu course sets. At noon the most popular is "tendon" menu set (tempura in an rice bowl for only 3000 yen.) At night you can choose both full menu courses or just a la carte. The pieces are served with all the ingredients at the perfect "cooking point", crispy and juicy conditions.
