Ushiya or Gyuya Edohachi, is a restaurant specializing in shabu shabu and sukiyaki. Experienced artisans are in charge of choosing the best meat and cutting it to the optimum thickness for this type of food. Basically the meat has to be passed through the boiling broth twice and blanched. "Shabu shabu" mimics the sound of meat passing by. In this way the meat with the appropriate thickness will be perfectly cooked with 2 passes. They have a pretty good "all you can eat & drink" sets, which of co ... urse includes wagyu. Also good sets for lunch. The sauces and scalding broths are homemade and very well made, based on a selection of the best ingredients: "Sekigahara Tamari" soy sauce, yuzu, sudachi, vegetables, etc. The restaurant is somewhat out of the center of Sapporo, located near the Chitose airport, however they offer a highly recommended free shuttle bus service, free depending on the course booked by phone.
