Yakigaki no Hayashi is another essential oyster restaurant in the Miyajima area. Founded in 1948, it was the first to offer oysters steamed in their own juices. With a refined technique passed down through generations, they cook the oysters on a large grill within their shells to preserve their aroma. To ensure optimal aroma and texture, the oysters are cooked upon order. It's also possible to enjoy raw oysters throughout the year. Thanks to the high salinity of the seawater and stable temper ... atures, the local oysters are particularly hygienic. Noteworthy is the local 'jigozen' oyster, which is more elongated and one of the most appreciated for its flavor and aroma throughout Japan. In the menu, aside from oysters, their conger eel (anago) stands out; it's also caught in the bay waters.
